 I don’t think I’ve made so many sweets and treats in my life than over the past week. We celebrated my husband Kale’s birthday 4 days after Kallen’s birthday, so there’s been ridiculous amounts of sugar running through our family’s bloodstream.

It’s been good and bad, all at the same time. Good for my taste buds and bad for my thighs. Good for the smiles on my birthday boys’ faces, and bad that my kids have been on a sugar high for a week. Emma was running so fast in our hallway the other night, she ate the wall. Literally. She had paint in her mouth, and a nice little bump on her chin to prove it. :/

I’ve had a pile of bananas sitting on my counter for a week. Who’s going to eat a nice, healthy banana when you’ve got mounds of cake in the fridge!? I thought I better make one last treat with them… ya know, so they didn’t go to waste. 😉

Banana Cake it was. It was moist, delicious and divine. I would serve this for a dessert or even for a brunch. When you taste it, you might even eat it for breakfast. It’s that good!

Banana Cake with Browned Butter Frosting

Cook Time 22 minutes
Servings 18

Ingredients

Banana Cake

  • 1 ½ cups granulated sugar
  • 1 cup sour cream
  • 1/2 cup salted butter, softened
  • 2 eggs
  • 1 ¾ cups mashed ripe bananas (about 3 to 4 bananas)
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Browned Butter Frosting

  • 1/2 cup salted butter
  • 4 cups powdered sugar
  • 1 ½ teaspoons vanilla extract
  • 3 Tablespoons milk

Instructions

Banana Cake

  • Heat oven to 375 degrees F. (350 degrees F, if using a dark pan) Grease and flour a 10×15-inch jelly roll pan.
  • Using an electric stand mixer, or hand-mixer, mix together the sugar, sour cream, butter and eggs until combined. Blend in bananas and vanilla for 30 seconds. Add flour, baking soda and salt. Blend together until combined. Spread evenly in the prepared pan.
  • Bake 20 to 24 minutes or until golden brown. Cool completely, then frost with browned butter frosting.

Browned Butter Frosting

  • Heat butter in a saucepan over medium heat. Heat past the melting point until it's boiling, and a delicate brown. Remove from heat and immediately add remaining ingredients. Whisk until well combined. Pour and spread over cooled cake. Serve and enjoy!

  2. Awe poor baby girl!!! Sugar does give you that crazy rush that makes you want to run up and down hallways screaming at the top of your lungs…not that my kids have ever done that:-)

    Maybe not so good for the thighs, but oh so good for breakfast, lunch, dinner, and another piece for breakfast!!! I love banana cake very very much:-)

  5. i made the cake last night and frosted it this morning. it kept tearing the top up…was the cake supposed to still be warm when frosting it? regardless, this is SO good! i am taking it to three different people because after i had a piece, i knew it’d be trouble in my kitchen if i didn’t get it out of here! 🙂 thanks so much!
