Chicken Spaghetti

Nothing says comfort food like this Cheesy Chicken Spaghetti! It really is all the cheesy goodness you see in the picture, so it’s no surprise it’s my kids’ new favorite dinner. The only way I know that is from the silence that over came the dinner table as we ate. There were giant mouthfuls of spaghetti at all times, so it made for one quiet dinner. haha. I love dinners like that!

This spaghetti recipe is super simple. Just a few convenient ingredients and you will be on your way to one family-pleasing dinner! The recipe is great as listed below, but I’m always thinking of ways to change things up. I’m weird like that. Adding some chopped green bell pepper, or even diced pimentos, would only make this more delicious!

Cheesy Chicken Spaghetti

Creamy, cheesy spaghetti with loads of chicken and flavor!

Ingredients

  • 16 ounces spaghetti noodles
  • 12 ounces Velveeta cheese, cubed
  • 1/2 cup milk
  • 2 cups cooked, shredded chicken
  • 2 cans (10 ounces) cream of chicken soup
  • 1 can (10 ounces) Rotel (diced tomatoes with green chilies) drained

Instructions

  • Boil the spaghetti noodles in a large pot of water, according to package directions. Drain water.
  • Meanwhile, in a large pot, add the velvet cheese and milk. Stir and cook over medium heat until cheese is almost melted.
  • Pour in both cans of soup and the Rotel tomatoes. Stir until mixture is combined. Continue to cook and stir for 8 to 10 minutes or until mixture is heated through.
  • Stir in the shredded chicken and cooked spaghetti noodles. Serve immediately in individual bowls. Enjoy!

  2. The title says it all! Cheesy chicken spaghetti and it is greatness! I made this for dinner last week and again tonight! My family begs for it! It is so good! I’m sure it will be made many more times in my home 🙂

  3. My kids turned their noses up at the “red things” to. I found, however, when I made it the exact same way but without the rote and used cellentani noodles instead they LOVE it. It’s a favorite here now. I tell them it’s, “grown up mac-n-cheese!” 😉 just a little love from one mom to another!

  4. This was great. I expected my husband to turn his nose up at it because he’s so picky. I left out the rotel for our own tastes but he went back for seconds. I made cheesy drop biscuits (Red Lobster style) to go with it. I think the sauce would be great over rice too.

  5. I thought this was SO delicious!! I made it for my neighbors, and they LOVED it. I also don’t typically like leftover spaghetti, but thought it still tasted great! Even my coworker took some leftovers and came back saying it was “yummy.” 🙂 Craving it just thinking about it! Thanks!

  6. I make this same recipe except we make nachos instead of spaghetti. Hint of lime chips are great. top with lettuce, tomatoes, and sour cream. Yummo!

  7. Made this two nights ago. Changed two things: didn’t have cooked chicken so I used skinkless chicken breast that I cut into cubes and browned in butter. I also didn’t have Ro-Tel tomatoes, we don’t get them here so I used a can of spicy diced tomatoes. The dish was a great success. Very tasty and saucy. Loved it. Had a bit leftover which I ate for lunch today. Tis recipe is a keeper and I will be making it again.

  8. Super easy and taste great! I just added some Cajun seasoning. Next time I think I will not add the full lb of velveta. It was almost too cheesy.

  9. I make a pasta with only the soups, sometimes add mushroom bits. Add chicken breast and stove top on the top.Delish!!!
