Today I have an AMAZING recipe for you. It’s a double bonus because it’s a crock pot recipe and boy aren’t those things life savers!? My crock pot is my BFF these day. When life’s been so busy I rely on this little gem to cook dinner for me. 🙂

Crock Pot Chicken Fajitas

Delicious chicken fajitas slow cooked in a crock pot!

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 red, orange and green bell pepper, cut in thin strips (seeds and ribs removed)
  • 1 yellow onion, sliced
  • 4 cloves garlic, minced
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 Tablespoons fresh lime juice
  • 1 Tablespoon honey

Serve with:

  • Flour tortillas
  • Sour Cream
  • Salsa
  • Shredded Cheddar Cheese

Instructions

  • Pour half of the canned tomatoes in bottom of crock pot. Spread in an even layer. Top with half of the peppers and half of the onion slices. Sprinkle garlic in. Top with chicken breasts.
  • Sprinkle the chili powder, cumin, paprika, salt and pepper over chicken breasts. Top chicken with remaining canned tomatoes, peppers and onion.
  • Cover and cook on LOW heat 6 to 8 hours, or on HIGH heat 3 to 4 hours, until chicken is cooked through and veggies are tender. Remove chicken and shred. Remove most of the broth/liquid that the chicken creates as it cooks from crock pot and discard.
  • In a small bowl whisk together lime juice and honey. Add to crock pot along with chicken. Gently toss to combine. Serve warm in tortillas with desired toppings. Enjoy!

  1. I loved this recipe. The only thing I did different was I sautéed the peppers & onions separately at the end instead of adding them to the crock pot so they wouldn’t be too soggy. I’ve added them in the CP in the past and that has happened. I also loved the honey and lime flavor and that it wasn’t too spicy. I will def make these again!

  7. My daughter is extremely allergic to tomatoes, but being that fajitas is one of my favorite foods I wanted to try this. I made it last week and it was amazing! I left out the tomatoes but added 2 cups of chicken broth. I made rice, and added black beans and corn and we actually ate it as a soup. I am making it again tonight because my parents are coming in from the west coast during the time I will be at a work meeting. My stepdad hates soup, so he can have fajitas while we eat it as a soup. It’s so versatile and delicious!

  11. I used boneless chicken thighs in place of the breasts, and when it came down to it, I couldn’t bring myself to discard two cups of that wonderful spicy broth-so I served this as soup! Big hit in my house-next time I will try this as a stovetop dinner.

  14. Hi, Holly! Love your recipes! I have a question about the Crock Pot Chicken Fajitas recipe. My husband is allergic to honey. Do you think there is something else I could substitute for the honey? Or just add the lime juice without something else? Or just omit that last step altogether? Sorry for all the questions, lol. Thanks in advance!

    1. Hi Karen! (sorry for the late reply) but you could just leave the honey out and be fine. If you want a little sweetness that it gives just add a tablespoon of brown sugar with the lime juice. 🙂 xo

    There are only two of us…so
    Monday night, fajitas….saved broth
    Wednesday night cooked rice in the broth added shalf of the fajitas, had a wonderful “stew”
    Friday night…enchiladas with cheese sauce

    made this in the instant pot with 2 frozen chicken breasts.

    Added 1/2 cup water Sautéed onions peppers garlic beforehand put those on bottom of instant pot then added frozen chicken and spices then added can of green chili’s then can of diced tomatoes closed lid and cooked for 20 mins with 20 mins natural release. Worked out great. I plan to make quesadillas with this mixture and some shredded cheese later.

    Family loved it! I drained off the extra juices, added enough water to cook a version of Arroz rojo (Mexican red rice). Great recipe!
