Beef Stroganoff

This Easy Beef Stroganoff recipe is a classic dish the whole family will love. It’s filled with seasoned ground beef and a creamy mushroom sauce served over egg noodles. Enjoy it with a veggie for the perfect meal!

My family absolutely LOVES this dish. This is a very simple, yet delicious ground beef stroganoff recipe. I withhold the plain mushrooms because my family just aren’t fans. They don’t mind the cream of mushroom sauce, but wouldn’t eat this if it were packed with mushrooms. haha.

If you are a mushroom fan, then definitely add some! 🙂 I would suggest adding half a pound of freshly sliced mushrooms to the sauce before you start to simmer it.

Beef Stroganoff

These easy skillet recipes are what my weeknight dinner dreams are made of. They’re so simple to prepare and from start to finish you can have this hearty meal on your table in 30 minutes. I like to serve ours with a side of broccoli and my family eats it right up.

Just a quick note- I like to simmer the beef mixture for a good 15 minutes. It gets rid of the strong sour cream scent, resulting in one fabulous savory sauce.

Traditionally, beef stroganoff is served over egg noodles, but you could serve this over any pasta of your choice. There is no going wrong with this incredible dish!

Cook Time 30 minutes
Servings 4

Ingredients

  • 8 ounces extra wide egg noodles
  • 1 pound lean ground beef
  • 1/2 cup finely chopped onion
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1 packet (0.87 ounce) brown gravy mix + water it calls for on package
  • 1/2 cup sour cream
  • 1 can (10 3/4 ounces) cream of mushroom soup
  • 2 teaspoons dried parsley

Instructions

  • Start by boiling egg noodles in a pot of water- as directed on package. Once cooked, drain water and pour noodles back in the same pot. Cover with the lid to keep warm. Set aside.
  • Meanwhile, cook and crumble ground beef in a large skillet over medium-high heat. Once beef is cooked, drain any grease.
  • Add the onion, garlic, salt, pepper, and garlic powder to beef in skillet. Stir well. Add the gravy mix (+ water the packet calls for), sour cream, and mushroom soup. Stir mixture. Reduce heat to low and allow mixture to simmer for 15 minutes. Stir in the dried parsley.
  • Serve beef stroganoff over the cooked egg noodles. Enjoy! ♥

Notes

For Freezer Instructions: Cook according to above directions. Let cool 20 minutes then store in a freezer-safe container. Freeze up to 2 months.
To reheat: thaw in fridge for up to 24 hours then reheat in a skillet over medium-high heat.

  1. I’ve used a recipe very similar to this for years. My family absolutely loves it. I like to add a few dashes of Worchestershire Sauce to the mixture after adding the sour cream & cream soup. For thickness, I don’t use beef broth. Instead, I either add beef bouillion granules or a packet of beefy mushroom dry soup mix to the meat after it browns.

  2. I made this tonight and it was sooo yummy! I halved the recipe because I was cooking for one and added mushrooms back in because I basically put mushrooms in any and everything I cook. It still came out super yummy! After I added the garlic and onion, I cooked it a little more before adding the broth just to get some more flavor and to make sure the onions were cooked. Thanks for sharing!!

  3. I was born in 1970… and this recipe has been a staple at my house growing up and at my house now. It’s my kids favorite meal! Because I have had many years to make this, I have changed some things. I don’t use the broth, and I use cream of chicken instead of mushroom, but sometimes I do add a can of mushrooms that I chop smaller (kids don’t seem to freak out as much not seeing “whole” mushrooms! LOL). Just another alternate just in case you don’t have broth or cream of mushroom on hand. (But I have had this recipe before, and it’s really good too!)

  4. Making this tonite. Even before adding the gravy is looked like the correct consistency. So I only added half the gravy suggested and it still looks kinda….runny. Did I miss something?

  5. Okay, so far I have tried your chicken cordon bleu casserole, your chic-fil-a copycat chicken sandwich and now this. So nice to break away from my regular recipes…adn these are truly delicious! I will be making all of them again!

  6. Just made this for dinner for my picky eaters! My husband doesn’t like mushrooms, son doesn’t like sour cream, and daughter doesn’t like ground beef. BUT THEY ALL LOVED IT! Said many times that I should make it again for our next meal…Thanks for sharing this recipe, I’m adding it to our weekly meal plan.

  8. Making this tonight for the first time, I don’t have packet gravy, I have jar gravy that I’m going to use instead and just add a little water. Going to saute some fresh mushrooms with the onions. I’ll let you know how it turns out. Thanks for the inspiration.

Made this tonight and loved it!! I doubled the recipe and used frozen chopped onions instead of fresh. Only had one can of cream of mushroom so i used cream of celery for the second. A definite keeper!!

I have never liked beef stroganoff and kept putting off trying this recipe. It tasted wonderful. The only change that I made was I had leftover roast so I used that as my meat. Next I want to try making it gluten and dairy free.
