Spring is finally here! That means it’s time for fresh salads and barbecues. I love it when I walk into the grocery store and see all of the fresh fruits and veggies. I bought a giant case of strawberries at Costco yesterday and knew exactly what I wanted to do with them- make this delicious Strawberry Chicken Salad. This is another great salad inspired from Rococo’s restaurant where I worked many moons ago. It is so simple, yet really delicious.

This incredible salad is filled with chopped romaine lettuce, sprinkles of sliced almonds, sliced strawberries and grilled chicken. What really makes this so great is the dressing. It is a combination of my beloved creamy poppy seed dressing mixed with light raspberry vinaigrette. It’s so simple, yet so perfect!

  2. Oh yeah! Definitely getting me in the Spring & Summer mood now. Got this one bookmarked! I always need good ideas when we go strawberry picking. AND I got some strawberries on sale at Kroger this past week. Woo Hoo!

  3. This really is a lovely salad. It speaks of spring and warmer weather and I’m ready for both. I hope you have a great day. Blessings…Mary

  4. Oooo Holly this looks wonderfully refreshing!

I actually have met Ree twice, once when she was here in Seattle for her cookbook tour and this last weekend. She was delightful each time.

PS – Ben and I tried the Monte Cristos’ those are my new faves!!

  5. Holly, this looks so yummy! I’m making the Mexican lasagna tonight as I write this note. I do have a question for you, I did notice the oriental chicken salad recipe, but we don’t have the sauce you talk about, what do I substitute for that marinade? Thanks, you rock!

  6. I used to put strawberries in salads, but haven’t done that in a long time. Yours looks delicious and I will definitely put it on my list. Thanks for sharing on Saturday Swap.
