STRAWBERRY CHICKEN SALAD

INGREDIENTS

  • 2 boneless skinless chicken breasts 
  • 2 teaspoons olive oil
  • salt and pepper, to taste
  • 6 to 8 cups chopped romaine lettuce
  • 1 cup freshly sliced strawberries
  • ¼  cup sliced almonds
  • ¼ cup feta cheese crumbles
  • 1 cup creamy poppyseed dressing
  • 1/2 cup light raspberry vinaigrette

COOKING INSTRUCTIONS

Start by pounding the chicken breasts to an even thickness. This ensures even cooking. Brush the olive oil on the chicken breasts and then season generously with salt and pepper.

Cook chicken on an outdoor grill (or cook on an indoor grill pan or skillet) until internal temperature reaches 165 degrees F. Set chicken aside and allow to rest at least 5 minutes before slicing.

Divide the chopped romaine lettuce, sliced strawberries, almonds and feta cheese among two large plates or bowls. Slice the grilled chicken after it has rested and place on top of the salads.

Mix together the poppyseed dressing and raspberry vinaigrette together. Pour over the salads and enjoy!
