Our company cafeteria used to serve these, and I have been looking for a recipe for a long time. I don’t think there were any mashed potatoes in their version, but I will be making these soon! Thanks for the recipe!!

I made these last night. I didn’t have any dried minced onion so I substituted “Garlic Garlic” which I think my wife gets from pampered chef. Wow! These were awesome! I’d be hard pressed to not use the garlic garlic next time. They were really good.

I have never made chicken croquettes this way, but I will fry them no longer. I will leave the mashed potatoes out though, as I would serve them with mashed potatoes, gravy and another vegetable. Thanks for this great new way to gook them, they’re going to be on my menu rotation.
