We went on a beautiful trip to Hawaii this year, and we’re all missing the beach, so my Hawaiian BBQ Chicken Pizza is on the menu! This pizza features a tangy BBQ sauce base, topped with juicy grilled chicken, sweet pineapple chunks, red onions, and a blend of mozzarella and cheddar cheese. It’s a deliciously unique twist on pizza that’s sure to be a hit with the whole family.

Menu Plan Monday this week is all about easy and simple recipes. It’s been a busy summer, and now that the kids are in school, it’s time to take a little break. It’s important to let dinner do its own thing sometimes, so you don’t have to stress. You’ll hardly break a sweat with most of these recipes.

When it’s time for a meal that can cook itself, I always go to my Crock Pot. I can set it on low heat and go about my day. My Crock Pot Stuffed Bell Peppers are simple to make, super delicious, and unique. These peppers are stuffed to the max with ingredients that are bursting with flavor!

For something on the lighter side, try my Chicken Strawberry Pasta Salad. It’s a great way to use leftover cooked pasta, and the last bit of fresh strawberries from the garden.

One dessert I can’t live without is a classic banana split. It’s the perfect treat for the warm temperatures we are still having. Since we are focusing on recipes that are easy recipes, try my Banana Split Ice Cream Sandwich Cake. It is so simple to assemble, and everyone will devour it!

Back to school time can be overwhelming for both kids and parents. New wardrobes, backpacks, shoes, classes, teachers, and schedules. There are a lot of plates to spin, especially if you have more than one kid going back. So, what about dinner? Don’t worry, I am here to help! For Menu Plan Monday, I am going to set the whole family up for success. Everyone will be nourished, energized, and ready to conquer the new academic year.

I feel so much better sending my kids to school knowing they’ve had a hearty and filling breakfast. I know it helps them to focus and have a better day. My Breakfast Bake is packed with protein. It’s easy to make at the beginning of the week, so you can meal prep and enjoy it for a few days.

We’ve had a great summer here at the Lofthouse, and I hope that you have too. There is a little bit of sun left to soak up, so I want to make sure everyone is making the most of this time. This week on Menu Plan Monday, I’m sharing some recipes that you can enjoy on your last pool days, or if you plan to picnic or camp. Enjoy these last few weeks of summer without turning on your oven so much!

There’s nothing quite like a freshly grilled piece of meat, or veggies that really make summertime the best, but this week I want you to turn your grill off and try my Garlic Butter Steak Bites on your stovetop. You can use these flavorful bites in so many ways! Salads, wraps, over rice, or just as the main attraction.

On a Friday night, there is nothing quite like a fresh slice of pizza. Especially homemade pizza. A slice of my Tuscan Garlic Chicken Pita Pizzas is utter bliss to me. You can use an air fryer to make these incredible pizzas.

You know that I must have something sweet at least once a week. My Lemon Berry Slush is a frosty beverage that you can enjoy at the end of a delicious meal. It’s also perfect to enjoy poolside. Either way, this tasty drink always hits the spot.

I’m so excited to share a huge milestone with all of you today. This is my 500th Menu Plan Monday! Can you believe that? I am so proud of the work that I’ve done to get Life in the Lofthouse here, and the only way I’ve achieved it is because of each of you. I couldn’t do this without all your continued support, so thank you! Thank you, thank you, thank you!

In celebration of hitting 500 menus I am sharing some of my favorite recipes. These are ones that are worth throwing a party for. We will be celebrating all week long here in the Lofthouse, and I hope you do the same!

It’s time to get the party started first thing in the morning. That is easy to do, especially with my Strawberries and Cream Crepes. They are so sweet, delicious, and fresh. Strawberries are a universal favorite fruit with the Lofthouse gang, and when I make these, the entire mood shifts to a positive one to start the day off.

For lunch or dinner, it’s an In-N-Out Cheeseburger for us. This is our all-time favorite summer burger, and this recipe beats waiting in that long drive-thru line. Get the grill going and let the good times roll!

My Italian Cookies are a great treat to have at any type of party. Whether it’s a wedding, birthday, baby shower, or celebrating your 500th Menu Plan Monday, these little cookies are fantastic! This recipe makes a ton, so there is plenty to go around.

Don’t you just love a meal that doesn’t require utensils? I adore any food that I get to hold in my hands and enjoy! Pizza, tacos, ice cream cones, anything that I get to hold onto and scarf down is always a blast to consume. This week for Menu Plan Monday, I want to share some of my favorite recipes that you get to hold, eat, and enjoy!

If you’ve been following Life in the Lofthouse for a while now, you already know that we love our Mexican food. My Shrimp Taco Bites are so flavorful, cute, and handheld delights! They are perfect for a party appetizer or a simple dinner with the family. Everyone will fall in love with these mini bites!

Margherita Pizza is another handheld favorite around here. You can never go wrong with a slice of pizza. This one in particular is my personal favorite. I love the flavor!

Now, for dessert, I am going to flip the script just a bit. I am taking inspiration from a dessert that you normally hold to eat, and turning it into something shareable for the whole family. My Caramel Apple Poke Cake is out of this world! Just in time for the sweet beginning of fall, this rich and satisfying dessert is a great end to a delicious meal. There are many recipes out there that scream comfort food. Fried chicken or a pot roast that simmers all day are a couple of my favorites. This week for Menu Plan Monday I am going to serve a variety of recipes that will bring comfort to your home, but they may not seem like traditional comfort food. Once you give them a try you’ll understand why it will warm your soul and home.

Here in Southern Utah, and across the state, Cafe Rio is a way of life. If you moved away from Utah and are coming back for a visit, I bet Cafe Rio is on your list of destinations to get your fix. My Cafe Rio Sweet Pork (Copycat) is the recipe you’ve been looking for without having to come back home to get it. Succulent slow-cooked pork that is sweet and savory and served best on a burrito, tacos, or salad.

For a comforting snack or finger food, at your next party, serve my Sweet and Sour Meatballs and watch your guests be overcome with joy.

There’s nothing quite like a homemade cookie. It’s probably one of the most comforting foods I can think of. My Lemon Sugar Cookies with Lemon Frosting will bring a smile to any face that takes a bite. Sweet and tart, these cookies are bright and full of life. Feeling hungry? If you’re anything like me, this is your natural state of existence. Always looking forward to the next meal. This week on Menu Plan Monday, I am going to serve you a set of recipes that are absolutely filling. These meals will stick to your ribs and keep you full, so you won’t be wondering when your next meal is. You and your family will be stuffed and satisfied after this week’s fabulous recipes.

What’s the most important meal of the day? That’s right, breakfast. It’s highly important to begin your day with a meal that will keep you full and energized. My Copycat Kneaders Chunky Cinnamon French Toast is one of the best ways to start the day. Weekday or weekend, this French toast recipe is mouthwatering and filling. It’ll keep you stuffed all the way until a late lunch or early dinner.

When it’s time for dinner, my Chicken and Broccoli Alfredo Stuffed Shells will keep you satisfied until breakfast the next morning!

If you have room for dessert, my Homemade Oreo Cookies are one of the best ways to end the day. These aren’t any regular Oreo cookies. Two homemade soft chocolate cookies with a homemade cream cheese frosting center. They are larger than the original version and twice as good! Just one of these cookies will satisfy any craving you may have.
