Happy Memorial Day, friends! This holiday is close to my heart as I have several family members who have served our country. What better way to show our appreciation for their service than with quality food and family time! This week we have a variety of recipes to satisfy every palate.

Can you believe we’re already halfway through May? Where does the time go? This week we’re welcoming the sunshine with recipes your family won’t want to miss! My goal with Menu Plan Monday has always been to craft easy, fun recipes that allow you to save time and money.

May is National BBQ Month so we’re coming in strong with Grilled Apricot Chicken. Nothing quite says summer like adding a tropical twist to your favorite barbeque dish. This chicken can be served fresh on top of salad or paired with your favorite sides. I’m drooling just thinking about it!

Calling all taco lovers! You haven’t tasted it all until you try my famous Taco Braid. It contains all your essential ingredients: seasoned ground beef, melted cheese, and your go-to toppings. But here’s the twist: Instead of a taco shell, everything’s wrapped in pizza dough and baked to golden perfection. This one is so good, you won’t be able to stop taco-ing about it.

We are already halfway through the year. To me, that means it’s a great time to stop, and soak in all the memories. On Monday we celebrate Memorial Day. We honor all the brave men and women who have fought for our country. Those who we have lost, and those who are still with us must be acknowledged. They give the ultimate sacrifice so we can live our lives freely. Thank you to each one of you! My Menu Plan Monday this week is dedicated to you all.

Show your thanks and appreciation with a backyard party on the patio! Fire up the grill and cook my Grilled Lemon Chicken. It’s one of the best meals for an outdoor party. The flavor is as bright as the sun, and every single guest will savor a piece of this juicy chicken breast.

It’s this time of year when our backyard pool becomes the focal point of our days. When the sun is shining here in Southern Utah, everyone seeks out a cool body of water. It’s like a beacon calling all of our names. For Menu Plan Monday, I want us all prepared to have people over for some fun in the sun!

My Ham and Cheese Sliders always hit the spot. I haven’t met a kid yet who doesn’t love this combo on a sandwich. The honey mustard brushed over the top with poppy seeds lights up any adult. They’re simply the best and perfect to eat poolside.

This big platter of BBQ Chicken Nachos is sure to attract the crowd you’re hosting, and sharing food is always fun! Everyone will rave about this delicious mountain of cheese-covered chips.

This week, for Menu Plan Monday, I want to make sure that you and your kids are fully energized to finish the school year out strong. How do we do that? Keep the kids fed with something sure to bring a smile to their faces. You can even pack some of these recipes for their lunch the next day!

What is one of the best summertime foods? Cheeseburgers! In any shape, size, or form. Nothing hits the spot quite like a juicy, homemade cheeseburger. Mother’s Day is one week from today, so get ready to pamper the mom in your life! I am blessed to have a husband and partner by my side, like Kale. He always takes such good care of me on Mother’s Day. For this Menu Plan Monday, I want to help all of you out by sharing some mom-worthy recipes. How about something unique and made from the heart? Let’s get cooking!

I highly recommend getting her outside. She’ll love it! Go find a picnic table, take a little hike, or just invite her over to your backyard. Serve my Spinach Salad with Bacon, Almonds, and Oranges. She will absolutely love it! It’s one of my favorite salads and is full of texture and flavor.

For dinner, if you want to really impress mom and show off those cooking skills she taught you, make my Baked Parmesan Pork Chops. They are elegant, divine, and she’ll feel grateful and proud of you.

As a mother myself, I am here to say that moms need something sweet at the end of a meal from time to time. My Strawberry Jell-O Poke Cake is unique and is perfect for this time of year. Just as the strawberries are starting to show themselves, this dessert comes along to utilize them to help celebrate mom.
