You don’t always need a special occasion to treat yourself. That is something I’ve learned over the years. I may have excelled a little too well, because I love a good treat! Although that has come with plenty of hard work. I say take yourself out on a random Tuesday. Or open that fancy bottle of wine with some take-out pizza! There is absolutely no reason at all to wait for a holiday to have a little something special. This week for Menu Plan Monday I am making sure that you have a way to make any day extraordinary. 

If you are anything like the Lofthouse gang, then you love Ranch dressing. We usually keep at least one, sometimes two, jars of it in the fridge at all times. One way I love to elevate ranch flavor is with my Rosemary Ranch Chicken. Wow, it’s so good. The rosemary really brings everything to life, and is a great way to make a regular ranch recipe extra delicious.

My Chicken Pot Pie Biscuits are another favorite around here. They are mini portions of the savory chicken pie baked in a fluffy biscuit. They are so good! It is a meal worth celebrating for any day of the week!

This week’s treat is my Heavenly Oreo Dessert. My family goes nuts for this one! It has Oreos from top to bottom, and amazing layers of cheesecake and chocolate pudding. Talk about heavenly! Anytime I make this, I know I’m about to make someone else’s day special, too.

It’s Labor Day weekend! Every year I’m thrilled when this holiday rolls around, and I know the kids are too. They started school a few weeks ago, so they deserve a long weekend too. If you’re in Utah, then there are two typical options for Labor Day weekend. You either head to Disneyland, or you soak up that last bit of summer sun with an outdoor barbecue. This week for Menu Plan Monday I am providing you with plenty of dinner options!

Labor Day is all about rest and taking the day off, so the cooking should reflect that, too. What’s the best kitchen tool to help you take it easy?  The trusted Crock Pot. What is one of the most iconic American Sunday night dinners? Meatloaf. This dinner takes me all the way back to childhood. We had it so many times growing up that I wanted to make sure my kids would love it just as much as I! My Sheet Pan Meatloaf Dinner incorporates the whole meal baked on one pan. This is the ultimate way to get a cozy meal all prepared in one pan.

This week on Menu Plan Monday, I want to dedicate this list of recipes to one of my assistants, Trent. Today, the 18th of September, is his birthday! So, I am filling this week full of fabulous foods that I know are some of his favorites. If you have someone in your life this week celebrating a birthday, hopefully you can use some of these to help you celebrate too! Make sure to stick a few candles in something delicious to help them make their birthday wishes come true.

Trent’s favorite fruit is strawberries, so I thought my Strawberries and Cream Crepes would put a smile on his face as he sees the recipes I’m sharing today. These crepes would make anyone’s birthday morning extra special.

Growing up in a steakhouse that his family owned and operated, Trent loves food just as much as I do. That’s why I added Garlic Butter Steak Bites to the list this week. These are juicy morsels of steak that are great on their own or will enhance any dish you decide to add them to.

You may be thinking that for dessert, I would go for a birthday cake. On the contrary, I know for a fact Trent loves whoopee pies. Oatmeal Cream Pies are a unique and fun way to switch things up, especially for an adult birthday party! They hold candles just the same, and everyone at the party gets their own little dessert.

Now that we’re back in the normal groove of life with our kids being back in school, and after-school activities, I love to make meals that are comforting and easy. This week on Menu Plan Monday I wanted to share some of my favorite recipes that your family will enjoy and that won’t add any extra stress to your day.

One of my favorite fast food joints that came to my hometown is In-N-Out Burger. We would always stop at least once, on our California trips, to get a Double-Double with cheese and fries, animal style. Now that we have one in St. George, we don’t go as much, but that’s because I’ve created a delicious Copycat recipe for their cheeseburgers. They are always a hit!

My BBQ Chicken Salad is what’s for lunch this week. Crisp, savory, and slightly guilt-free, this salad is one that my husband, Kale, absolutely loves. Especially when I serve it with my homemade ranch dressing.

You know I always have something sweet planned to end the week with, so I’m thrilled for you to try my Banana Blondies. These bars are so soft, sweet, and filled with banana flavor. There is never a crumb left after I make them!
