					<description><![CDATA[This was so good. My DH kept raving about how good it was. Chicken breast with ribs attached were on sale, so hubby kindly sliced the top of the breasts off
 The rest went to crockpot for dogs. I would use whole ones for dogs otherwise.  I coated with Cajun seasoning and quick fried in bacon grease.  Removed chicken browned chopped onion and garlic and added to mix with cream cheese and garlic seasoning.  Added more grease and butter to wilt spinach.  These large breast can be dry, stringy and rubbery.  Problem solved with this recipe.  And again sooooo good.  Thanks.]]></description>

I used drumsticks tucked tightly into a non-stick casserole dish.  I softened the cream cheese in the microwave and then stirred in frozen chopped spinach, garlic oil, and italian herbs (couldn&#039;t find italian seasoning).  Then I spread a thick layer of this mixture over the top of the chicken, put the lid on the casserole and put it in the oven for an hour at 190C (we&#039;re Australian).  I skipped the grated cheese altogether.  After half an hour I took the lid off.  I served it with homemade scallop potatoes (sliced parboiled potatoes, sliced and fried bacon and onion in alternating layers covered with thickened pouring cream, in the oven for 45 mins) and everyone at the weekly family Sunday night dinner loved it (I doubled it to feed three big guys and two smallish women with leftovers for next day&#039;s lunch). I used Thyme, oregano, rosemary, salt and pepper as my SEASONINGS

I added some finely diced onion on top of the chicken with the garlic, maybe a third cup?  Lightly COVERED

I sauteed the spinach in butter instead of olive OIL

The cream cheese didn&#039;t spread very well prior to cooking, so near the end I pulled out the dish and using a spatula, spread the cream cheese mozzarella spinach mixture more evenly and put it back in the oven for 3 or so minutes under the broiler.

I let it stand for 10 minutes before serving also.
