I fixed this as a side dish last night to go with our white chicken enchiladas. It was delicious and my husband said save this recipe. We are having all leftovers tonight. This was super easy to make. I went right by the recipe.

I’ve made it in a pressure cooker, I’ve made it by 8x’ing the recipe for large family functions. it turns out so great every time! I’ve also tried it with brown rice and it worked out great, I just followed my brown rice cooking instructions as I needed to cook it longer/differently. This recipe is so great! Thank you!

Couldn’t wait to try it. It was the best rice I have ever made. It is a real favorite. I did change one thing, I used water with seasoning instead of the chicken broth as we are vegetarian. I have made it again for company tomorrow.
