Before I describe how wonderfully delicious and EASY these doughnut bites are to make, I first need to give props to all you stay-at-home moms out there. My husband has been up in Salt Lake City for a work training all week, so I had to take work off and be home with the kids. Holy cow, have I been a busy gal! Between laundry, cooking, getting Kelsey off to school every morning, cleaning, chasing after my 11 month old baby and my 3 year old Emma, I have not had one minute to breathe, blog, or sit on my butt and watch T.V. It is just non-stop work.
I used to think that me being a full-time working Mom had me busy, but Ive come to realize that leaving for work early every morning is actually easier. I think having that ‘adult’ interaction at work, and not being constantly responsible for the kids needs and wants all day long, work really is easier than staying home with them all day.
Please dont get me wrong. I LOVE my kids more than anything or anyone in this world! They are my whole life. But I honestly thought that this week would be easier, and so much funner than going to work. I was looking forward to just being able to ‘relax’ with my kids! HA, that was wishful thinking! I have never been busier! So I take back everything I’ve ever assumed toward stay-at-home Moms. You gals need a pat on the back! You have the toughest job in the world! : )
Okay, on with these doughnuts. I’ll make it short and sweet. They are HEAVEN. Period. The end.
Cinnamon Roll Doughnut Bites
Ingredients
- 1 can 12.4 oz Refrigerated Cinnamon Rolls
- 3 cups Vegetable Oil
- 1/2 cup Sugar
- 1 Tablespoon Cinnamon
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Almond Extract optional
Instructions
- Heat oil in a medium skillet or deep-fryer to 350 degrees F.
- Mix the sugar and cinnamon together in a small bowl. Set aside. Remove rolls from container, set icing aside.
- Cut each roll into quarters. Gently and carefully place 4 quarter rolls at a time into the oil and fry for 30 seconds to 1 minute or until really golden brown ( you want to make sure they fully cook in the center ).
- Place cooked rolls onto a paper towel-lined plate to soak up grease. Once all rolls have been cooked, roll them into the cinnamon and sugar mixture. Place icing in a microwavable bowl and heat for 10 seconds. Add in vanilla and almond extract and stir. Drizzle over the doughnuts and devour!!

Holy moley! These are making me drool right now! What a yummy treat. Being a stay home mom is great! Once you get a routine down, its not so bad, crazy wise. Although we do have our days : )

Yeah, I’ve been on both sides of that one and definitely prefer working. I NEED adult interaction and am a better Mom because of the break I get.
