In reply to April. It's important to use the tomatillos. They are what give the dressing their specific flavor and color. Using regular tomatoes will result in a completely different dressing.

I can not find mexican green tomatoes. Can I use any other type of tomato?

I have to ask if a tomatillo is related in any way to peppers.
It wouldn’t be pretty if I had one and had a reaction.

Man, this dressing looks SO good! We don’t have Cafe Rio here in CA but I’ve sure heard a ton of great things about it and this looks like the perfect way to get a taste!
