You know those dishes at the family BBQ that everyone seems to constantly hover over? There is always one side dish that takes everyone by storm and becomes the star of the spread. My Fiesta Corn Dip is that dish! It is crunchy, creamy, and packed with flavor. It will get the fiesta started!

WHAT IS FIESTA CORN DIP?

This dish can serve as either an appetizer or side dish. Sweet crisp kernels of corn are mixed with other vegetables such as bell peppers and diced jalapeno. This fresh array is blended with spices for a layered depth of flavor. Silky cream cheese and Greek yogurt brings everything together for the perfect dipping consistency. Once you start to enjoy this phenomenal side, you’ll be grabbing things you wouldn’t normally dip into the bowl just so that you can get another taste!

HOW DO I MAKE FIESTA CORN DIP?

For the most flavorful and fantastic profile, this dip requires a little time to fully come together. It is well worth the wait as everything will marry together as it sits. Here is the list of ingredients needed to make the dip:

  • 4 cups corn
  • Red bell pepper
  • Diced jalapeno
  • Softened cream cheese
  • Greek yogurt
  • Cumin
  • Chili powder
  • Cilantro
  • Green onion

WHICH TYPE OF CORN SHOULD I USE FOR THE DIP?

One of the beautiful parts about this recipe is that you can use any style of corn that you prefer or may be convenient for you. If you use canned corn, make sure to strain the excess liquid that is in the cans then rinse the corn in water.

If you prefer to use frozen corn, allow enough time for it to thaw before adding to the mixture. This way you won’t have any frozen bites.

When corn is in season, I highly recommend using fresh corn. Either boil on the stove top or grill the corn and shave off the cob before adding into the dip mixture. To take this dish to a whole new level try adding my Cilantro Lime Grilled Corn for a full-on fiesta!

AFTER I MIX THE DIP IS IT READY TO SERVE?

Once you have assembled all your delicious ingredients into a bowl place it into the refrigerator for no less than 3 hours. It will allow everything to come together in the fridge. This way every little bit of flavor will come alive while you are munching away. If you have enough time to allow the dip to sit and chill overnight, it will only get more flavorful!

WHAT DO I SERVE WITH FIESTA CORN DIP?

I haven’t met a chip that didn’t like this dip. When I serve it, I make sure to have plenty of tortilla chips and corn chips on hand. These are classic and will give it that extra great crunch base that is just exquisite with this. For a little more fun try either Nacho Cheese Doritos or Ranch Doritos. We tried this at our last family BBQ, and it practically blew everyone’s mind at how good it was.

Honestly, my personal favorite way to enjoy this is by topping it on grilled chicken and shrimp. It is SO GOOD that way!

WHEN SHOULD I SERVE FIESTA CORN DIP?

Honestly, anytime is a good time to make this dip. Otherwise, the spring and summer months are the perfect time of year to make this dip. It is great for outdoor and backyard family and friend gatherings. Kids and adults both will love this dish so much that the bowl is practically guaranteed to disappear.

HOW LONG CAN I STORE FIESTA CORN DIP?

If you have some leftovers make sure to keep it refrigerated and covered. This way you can keep it for up to 3 days.

Fiesta Corn Dip

Ingredients

  • 2 cans (15 ounces, each) sweet corn, drained (can also use 4 cups fresh or frozen corn. Thaw frozen corn first.)
  • 1/2 red bell pepper; remove seeds then dice
  • 1/2 Tablespoon freshly chopped jalapeno, seeds removed (can add more or less depending on heat tolerance.)
  • 4 Tablespoons chive and onion cream cheese, softened
  • 1/4 cup plain Greek yogurt
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 2 Tablespoons freshly chopped cilantro
  • 2 green onions, thinly sliced

Instructions

  • Combine all the ingredients in a medium size mixing bowl. Gently stir until everything is combined and evenly coated.
  • Cover bowl with plastic wrap then store in the refrigerator for at least 3 hours or longer to incorporate all of the flavors.
    Serve dip with your favorite tortilla chips and corn chips. You can also serve this dip over chicken or shrimp. Enjoy!
