           I LOVE LOVE LOVE me some doughnuts 🙂 Mmmmm.. I have fond memories of when I was growing up going to get Saturday morning doughnuts with my Mom and sisters. We would go to a local bakery called ‘Curtis Bakery’. They have the most delicious doughnuts I have ever tasted! It is a very popular bakery here in St. George.

         Now that I am all grown up 🙁 .. and a Mother myself, I have kind of started a tradition with my kids. Almost every Saturday morning, I go down to the local Lins Marketplace in Hurricane and get us doughnuts. Yeah, I know its not the healthiest tradition.. but we only do it on Saturdays and we love it! My girls always request a chocolate doughnut with lots of sprinkles 🙂 and I usually get Kale and I either a maple or chocolate bar!

        Lately I have been on a search for a yummy, yet easy homemade doughnut recipe. Ive heard they are hard to make, and take a lot of practice. That didn’t sound like fun to me. Im a busy Momma that likes easy, simple recipes so I looked at a bunch of different doughnut recipes, and came up with this one! They turned out AWESOME!! I used Pioneer Womans doughnut glaze and it finished them off soooo perfectly 🙂

        Kelsey asked me while we were eating them, “Mom are you going to put these on your blog?” … I said “Yeah Kels, Why?” and she said “Oh Good, cause they are SO GOOD and you need to tell the people on your blog that I ate TWO!” … haha  She’s so cute, and she’s right, she did eat two, and I ate two and Kale ate two!! ha Their HEAVEN! Glazed Jelly Doughnuts

2- (1/4 oz) packets of Active Dry Yeast

1/2 cup warm water

1/3 cup warm milk

3 egg yolks

1/3 cup butter, melted

1/2 cup sugar

3+1/2 cups all purpose flour

1 tsp salt

Strawberry jelly

Oil for frying

 

The Glaze

 

3 cups powdered sugar

1/2 tsp salt

1/2 tsp vanilla

1/2 cup cold milk

 

    

        In a large bowl dissolve the yeast in the water. Let sit for 5 minutes. Then add butter, milk,  egg yolks, and salt. Mix Well.

       Then stir in the flour until dough forms. Place the dough in a greased bowl and let rise for an hour in a warm place in your house.

       After dough has risen, punch down. Knead for 2 minutes. On a clean, floured surface roll out dough into 1/4 inch thickness. With a 2 inch circle cookie cutter, cut out 40 circles. (Cut out as many circles as you can, and then re-roll out to get all 40.)

       With half (20) of the dough circles, scoop a 1/2 tbs of strawberry jelly in the center. Top with another dough circle and press edges to hold together. Place all on a greased cookie sheet. Cover and let rise one hour.

       In a large pot, heat oil to 375 degrees. (Do this while your doughnuts are rising, it will probably take the whole hour to heat up)

       Fry the doughnuts in the oil on each side for about 1 minute or until golden brown. Place cooked doughnuts on a large plate with paper towels to drain grease. In the meantime, stir together all of the GLAZE ingredients and drizzle over the top of the doughnuts!! SOGOOD 🙂
