I'm new to your site - thanks for all of the great ideas! I was searching for what to do with left over shredded chicken and roasted potatoes. This was a great springboard! I followed your recipe, cut down a bit on the time in oven, and added in some leftover roasted broccoli and spinach I needed to use. It was fantastic!

Nice pot luck dish. Yummy. Kids love it Kept all proportions, timing etc the same. Changed method a little. 1. Mixed spices and 3 T oil and tossed potatoes in that mix before starting to bake. Put diced chicken in bowl with any remaining oil mix. Fried up bacon, set aside, poured off most of fat, then briefly sauted chicken in bacon grease til surface colored, before adding to potatoes. Added to overall flavor I think.

I left the skin on my potatoes, used different cheese (fiesta blend & mozzarella), and omitted the bacon & onion - just trying to use food I have on hand. I also used a lemon infused olive oil & salted & peppered the potatoes before cooking. It turned out really good!

I just made this tonight and my family was oohhhing and ahhhhhhing and Couldn't get Enough! It's delicious! Crispy potatoes, tender chicken, cheese & Bacon? You can't go Wrong! My daughter wants me to show her how to make it, and she never asks for recipes. I only had bacon bits, but it gave it a nice smokey flavor. I also added a tbsp of onion powder by mistake, but still it was a Hit! Thank YOU!!
