Quick question though: have you ever made it in an instant pot AND if so, how long do you set it for? And natural or quick release?

Yes Mary, you can definitely make this a day in advance. Just store it covered in the fridge before using. Then reheat on stovetop or microwave ๐Ÿ™‚
