I’ve been sticking to my New Years resolution pretty well. It’s a miracle! I have shed a couple pounds, feeling better and have more energy. I have to give these awesome No-Bake Energy Bites some of the credit. I love these things! They are so delicious, healthy and my new fave on-the-go snack.

These little no-bake bites are chock full of oats, coconut, peanut butter, flax seed and honey. I love the little pieces of chocolate chips through out. They are so easy to whip up and do not require baking or cooking of any kind! 

I love that my entire family loves these, too. I’ve been making these the last few weeks and storing them in my fridge up to a week. When my kiddos ask me for a snack I hand them a couple and they eat them up in no time. They think Momma just gave them a little dessert! 😉

No-Bake Energy Bites

Prep Time 1 hour 10 minutes
Total Time 1 hour 10 minutes

Ingredients

  • 1 cup old-fashioned oats
  • 2/3 cup shredded sweetened coconut
  • 1/2 cup creamy peanut butter
  • 1/2 cup ground flax seed
  • 1/2 cup chocolate chips (I used milk chocolate)
  • 1/3 cup honey
  • 1 teaspoon vanilla extract

Instructions

  • Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for 1 hour.
  • Once chilled, roll into 1″ inch balls. Store in an airtight container and keep refrigerated for up to 1 week.
  • Makes about 20 bites.

  1. These look wonderful but seem like they would be high in calories…any idea of how many would be in one?

    1. I used a recipe calculator and got about 117 calories for 20 pieces. If this is high for you, you could make the balls a bit smaller to decrease the serving size (and calories!).

  2. So, I don’t like coconut but I trust you, Holly, more. I made these tonight because I’m also trying to eat healthy – and I cannot believe how delicious they are! They are probably a bit high in calories because of the peanut butter and honey, but they’re better than straight chocolate or a donut.

        1. I added two whole bananas and baked it for 30 minutes at 350 degrees. It was too moist to sit in the refrigerator to harden.

      1. I’d try replacing 1/3 of the peanut BUTTER, and see how that goes. I’d make the recipe as it is, so you can have an
        Idea of how it should end up
        .
