Just made these and my husband LOVES the cookies – I had him taste test them before I added the cream filling! My filling seems a little runny and I’m concerned it will just squish out when we bite into the pies. I followed the recipe exactly, so not sure if this consistency is normal? Regardless, they are delicious! I’m going to freeze for a few days before serving.

I made these amazing cookies about 4 years ago and I lost the recipe. Could not remember the name of the blog where I first found them to save my life. For the past year I have been searching and searching for these cookies. I put in oatmeal cream pie cookies using cream cheese filling and I am back on the moon! So excited that I just made a batch. Love at 1st bite.

Although my kids and I loved the oatmeal creme pies (yummy), the cookies on their own are absolutely delicious! I made the cookies again tonight, added chocolate chips to half of the batch…what a great recipe!

I made this recipe for the 4th of July and it was a HUGE success!! The cookies were tender and delicious (just the right amount of cinnamon) and that filling – whoa, I could eat it by itself 😉 For the 2nd batch and added raisins… mmmm mmmm good! this will definitely become one of my staple recipes! Thank you so much for sharing these delightful treats!

Hey Holly!

I also don’t care for the marshmallow fluff! I have avoided sandwich cookies because of that very reason. But cream cheese frosting??? Oh yeah! Another great recipe my loved ones will love. We are having our parents for dinner on Sunday and will be serving a breakfast type meal. What would be better than oatmeal sandwich cookies with our breakfast themed dinner? They will be perfect!!
