Perfect Pot Roast is so delicious, and makes for amazing leftovers to eat throughout the week. One of my favorite functions of this recipe is the day after meal! I love to use the leftover meat for French dips. Load this meat up on a hearty bun and top it off with a little of your homemade gravy, and provolone cheese. *chef’s kiss*

HOW LONG DO I NEED TO COOK THE ROAST?

I recommend cooking on low heat for at least 9 to 10 hours. You can also cook on high heat for 6 to 8 hours if you’re in a time pinch.

DO I MAKE THE GRAVY SEPARATE FROM THE ROAST?

The gravy is created as the roast cooks in the slow cooker!

CAN I USE ANOTHER CANNED SOUP INSTEAD OF CREAM OF MUSHROOM?

Of course! Try substituting Cream of Celery or Cream of Potato soup instead.

Perfect Pot Roast

Ingredients

  • 2 to 3 pounds boneless rump roast
  • 2 cans (10 ounces, each) cream of mushroom soup
  • 1 packet dried Lipton Onion soup mix
  • 1 beef bullion cube

Instructions

  • Place all ingredients into a large, greased slow cooker (I use a 7 quart).
    Cover with lid and cook on low heat for 9 to 10 hours, or on high heat for 6 to 8 hours.
    Shred roast then serve with the gravy it creates. We like to serve ours over mashed potatoes or on top of toasted hoagie rolls. Enjoy!

Notes

** I will sometimes add some fresh cut carrots to the roast the last few hours of cooking.

  2. I’ve been making mine (basically) this way for YEARS! Except I add carrots and potatoes. I’ve also realized that I like the “Beefy” onion soup mix much better. I’ve also never tried it with beef bullion. I’ll have to try that.

  3. Pot roast is one of our most favorite meals. I have been making a very similar recipe to yours for years but I use Campbells Beefy Mushroom soup. I also add carrots & potatoes to make a complete meal. I like another’s suggestion to use the beefy onion dry soup. Will purchase that next time I make this. Thanks

  4. I’m new to using a crock pot. Have you made this with potatoes and carrots? Would I change the cooking time at all if I added those? Would you advise me to put the carrots and potatoes below the meat or on top? Thanks! 🙂

    1. Bre, Keep the cooking time the same when adding diced carrots and potatoes, and I would put those on top of the roast. Hope you enjoy this recipe. 🙂

  5. Just made this today..cooked on high for only 6 hours and that was way too long for the meat, unless you enjoy eating leather! The flavoring was perfect, however, I did not put my vegetables, carrots, onions, celery and potatoes in until 2 hrs before it was due to be done, and they were perfect, and I added just a little cornstarch to thicken stew. In my opinion, I would only cook meat on high 3 to 4 hours, adding veggies for the the last 2 hours!

  6. I made this for the first time and it was delicious! The roast was perfect! I was reluctant to try this recipe because I do not like mushrooms. I read the reviews and decided to try it. I used Cream of Potato soup in place of the Mushroom Soup and I used Liptons Beefy Onion Soup. It was perfect! The roast was tender and moist and we loved it.

  7. I make mine almost the same way but I cook it with my potatoes and carrots. Do you ever do this? I also usually put 1 cup of water. Do you think it would cook the potatoes and carrots ok if I omit the water and use what you have?

  8. How do you make sure the bouillon Cube gets dissolved and mixed equally around in the soup mixture? Looks good but hesitant to make seems like it would need some type of liquid

    Years ago I made this same recipe—but using the oven—-It was the first meal I cooked for my then boyfriend. After one taste, he asked me to marry him! I never made it in a crock pot, but can’t wait to try it! Sadly my husband has passed away, but I still have great memories.

    This roast was so delicious made it just like recipe calls for. My plate looked just like the one you posted roast, mash potatoes, gravy and carrots the whole family loved it. We have leftovers for tonight. Another great recipe Holly. Thanks for sharing.

  11. This is my go to pot roast recipe. so easy and simple and delicious! I add thinly sliced mushrooms just cuz we luv’um. I do roasted carrots on the side w/ mashed potatoes but i put chunks of unpeeled yellow potatoes in the crock the last few hours for the hubby as those are his favorite. not sure why this is in all caps… i’m not yelling! but i really love this recipe! ok now i might be yelling! thank you!!!!!

    This was the 1st meal I cooked for a guy I was dating in college 50 years ago. After supper, He said he was going to marry me! I laughed at him. He passed away 10 years ago, but he is still the love of my life. When ever I make this roast I think of him.
