Especially, when you’re having one of “those” days, but you want to stay on track of your calories. Those days are the kind of days I CRAVE sugar. I guess when I’m a stress ball sugar is what I go for. But when I’m trying to lose a few pounds, like now, it can be a dangerous thing. That’s where this lovely little cake comes in handy. 😀 You guys, this cake is so delicious, and each piece is roughly around 200 calories. So you can indulge in a slice and not have to feel guilty at all.

Greek yogurt replaces the oil and eggs in this Skinny Funfetti Cake to make it healthier, extra moist and SO delicious! It was super easy to make and really really good. If you’re not on a diet or care about cutting back on sugar feel free to use regular ingredients instead of the sugar-free. But I do suggest making it this way with the Greek yogurt. It’s a new trick I’m sure I’ll start using a lot when I make box cake mixes!

Life-in-the-Lofthouse.comI’ve seen a lot of controversy online about calling recipes ‘skinny’ so I thought I’d give my two cents about the subject. I absolutely think there is nothing wrong with calling a recipe skinny. When that word is used, like I’m using today, all it’s doing is letting people know it’s a lighter version of an original recipe. These skinny recipes are usually lower in fat and sugar and are replaced by different ingredients. That’s pretty much it. Nothing to get all worked up about. 😉

Okay, so stepping off my little soapbox now. haha. Make this delicious cake, people! It is one of a kind and I promise you won’t regret one single bite!

Skinny Funfetti Cake

All the flavors of the heavenly FUNFETTI CAKE but with fewer calories and sugar!

Ingredients

  • 1 box (15.25 ounces) funfetti cake mix
  • 1 cup fat free vanilla Greek yogurt
  • 1 cup water

Pudding Frosting

  • 1 box (3.4 ounces) sugar free instant vanilla pudding mix
  • 1 cup 1% milk
  • 1 tsp vanilla extract
  • 1 container (8 ounces) lite whipped topping, thawed

Instructions

  • Preheat oven to 350 degrees F. Spray a 9x13-inch inch baking pan with cooking spray. Set aside.
  • In a large bowl, mix together the cake mix, Greek yogurt, and water. Mix well until combined. Pour mixture into prepared baking pan, spreading batter out evenly.
  • Bake 25 to 30 minutes or until toothpick inserted in center comes out mostly clean. Cool completely before frosting.
  • In a medium bowl, whisk together pudding mix, milk, and vanilla extract until thickened and no lumps remain. Fold in whipped topping. Spread frosting over cooled cake and top with lots of sprinkles. Enjoy!

    Omg! Love these! I just made them as a VALENTINE’s Day treat! Yummy! I made them into 16 cupcakes instead, used fat free Fage greek yougurt, skim milk, and truwhip- knOcked the calories down a little lOwer without SACRIFICING taste! Absolute DelicIousness! No one will ever suspect it’s a healthier cake! ☺️

    Made this tonight and it’s amazing! I couldn’t find light cooL whip so I used regular. For a 9×13-inch pan for 24 servings each slice came to 115 cals/ 1.3 protein/ 22 carbs/ and 2.4 fat. Perfect for my macro journey! Thank you!
