One of the best things about Italian food is the fresh ingredients. Italians know how to get the flavor out of everything that comes from the earth. They do it in the simplest ways too! One recipe of theirs that I can’t get enough of is bruschetta. The tomatoes, basil and garlic go together so beautifully. This recipe for The Best Bruschetta is always my go-to.

Simply put, it all comes down to the quality of the ingredients for this recipe. Fresh tomatoes, basil leaves and garlic are the main stars of the show! Combined with olive oil, salt and pepper, the simplicity of these ingredients will create a dance on your palate!

INGREDIENTS

  • 1 loaf French bread
  • 1 ½ tablespoons extra-virgin olive oil, divided
  • 6 Roma tomatoes, diced
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 1 Tablespoon balsamic vinegar
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • Balsamic glaze, optional
  • Freshly grated Parmesan cheese, optional

HOW TO MAKE THE BEST BRUSCHETTA

Preheat the oven to 400 degrees F. Cut bread into ¼-inch slices and place on a baking sheet. Lightly drizzle all the bread slices with the 1 tablespoon of olive oil. Bake for 10 minutes or until lightly toasted.

In a medium bowl, add diced tomatoes, chopped basil, garlic, balsamic vinegar, salt, pepper, and the remaining 1/2 Tablespoon olive oil. Mix until thoroughly incorporated.

Cover and let sit in fridge for 10 minutes so the flavors can blend.

Spoon 2 Tablespoons of the bruschetta mixture on each slice of toasted bread. Drizzle a half teaspoon of balsamic glaze over each piece and a sprinkle of Parmesan cheese, if desired. Enjoy!

WHAT TO SERVE WITH BRUSCHETTA?

Bruschetta can truly go with so many meals. My very favorites are topping it over grilled chicken and steak. It’s also wonderful in salads!

My family enjoys it served with my Baked Spaghetti. It’s such a filling and delicious dinner. And makes the best leftovers for a few days.

HOW LONG DOES IT STAY GOOD FOR?

If you do have some leftover, then store it in the fridge for up to 3 days. The longer it sits the better it gets! I actually prefer to make this the day before I serve it!

  • Balsamic glaze (optional, but highly recommended)
  • Parmesan cheese, freshly grated (optional)

Instructions

  • Preheat the oven to 400 degrees F. Cut bread into ¼-inch slices and place on a baking sheet. Lightly drizzle all the bread slices with the 1 tablespoon of olive oil. Bake for 10 minutes or until lightly toasted.
  • In a medium bowl, add diced tomatoes, chopped basil, garlic, balsamic vinegar, salt, pepper, and the remaining 1/2 Tablespoon of olive oil. Mix until combined. Cover and let sit in the fridge for 10 minutes so the flavors can blend.
  • Once the bread is toasted, spoon about 2 Tablespoons of the bruschetta mixture on each slice of bread. Drizzle a half teaspoon of balsamic glaze over each piece and a sprinkling of Parmesan cheese, if desired. Enjoy!
