I apologize for being MIA lately. We have been so busy the last week with Emma’s birthday party and getting ready for the new school year. I have to be honest, I am so happy the kids start school tomorrow. I love them dearly, and we had an incredible summer, but Momma’s ready for a little peace and quiet while I work now. 🙂

These Twix brownies were the star dessert at Emma’s birthday party. They taste just like the famous candy bar with the caramel and shortbread layers. The brownie at the bottom take them to that next level of deliciousness. I will say they do take longer to make than most brownie recipes, but they are well worth it! Trust me. 🙂

Ingredients

BROWNIE LAYER

  • 1 cup salted butter softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1 ⅓ cups all-purpose flour

SHORTBREAD LAYER

  • 1 box (10 ounces) Lorna Doone's shortbread cookies
  • 6 ounces cream cheese softened
  • 1/2 cup granulated sugar

CARAMEL LAYER

  • 1 bag (11 ounces) caramel bits
  • 2 Tablespoons milk

CHOCOLATE LAYER

  • 1 ½ cups milk chocolate chips
  • 1 Tablespoon shortening

Instructions

  • BROWNIES: Preheat oven to 350° F. Grease a 9×13-inch glass baking pan with non-stick spray. Cream butter and sugar together in a large mixing bowl. Add eggs and vanilla and mix until just combined. Add salt, cocoa powder and flour gradually to wet mixture until combined. Don't over mix. Pour brownie batter into prepared pan and spread out evenly. Bake 25 to 28 minutes. Remove from oven and cool completely.
  • SHORTBREAD LAYER: Place shortbread cookies in a food processor and crush until fine crumbs. Place crumbs in a bowl and add cream cheese and sugar. Beat with a hand-mixer until combined. Press this mixture evenly over cooled brownies.
  • CARAMEL LAYER: Place caramel bits and milk in a microwave-safe bowl. Microwave in 30 second increments, stirring in between, until melted. Pour over shortbread layer. Place in fridge to let cool completely.
  • CHOCOLATE LAYER: Place chocolate chips and shortening in a microwave-safe bowl. Microwave in 30 second increments until melted. Pour over caramel layer. Place in fridge to let brownies set before slicing and serving. Enjoy!

  1. I live for my kids but I have to say I did a serious happy dance this week for back to school, too. LOL. I work from home as well and am enjoying the 6 hours a day of a clean, quiet house. Did I mention the house was quiet? 😉 I’m loving it.
These brownies look amazing and I’ll be excited to try these….. they would make a great dessert at a get together. Thanks for the post, Holly.

  2. Holly, these do look amazing. As soon as I’m off the chocolate restriction I’ve been placed on, I will be making these. Why should my co-workers enjoy my hard work without me? 🙂

  3. I am looking for a dessert to bring to a neighborhood party this week-end. These sound like they would be a hit. I have a question though, the Caramels layer calls for a bag of caramels bits, would that be a bag of square caramels that are individually wrapped, or is there something else? Thanks for the recipe. Can’t wait to try them.

    1. Beth, no the caramel bits are just little tiny circles of caramel, unwrapped. They are right next to the bags of wrapped caramels. (In most grocery stores in the baking aisle) They’re so much easier to use than unwrapping all those wrappers! 🙂

Hi! I tried this recipe last night, well just the brownie layer and it was sooo good! Not too sweet, but this gave those beautiful crackly brownie tops but so nice and soft inside. I added walnuts to mine. This recipe is great! Thank you for sharing!
