Breakfast Potatoes

Ingredients

  • 1 bag (5-pounds) Russet or Red potatoes, cut into cubes
  • 1 small yellow onion, diced
  • 3 cloves of minced garlic
  • 1 to 2 green bell peppers, seeded then diced
  • 1 to 2 red bell peppers, seeded then diced
  • ¼ cup vegetable oil
  • ¼ cup butter, melted
  • 1 ½ teaspoons seasoned salt
  • ¼ teaspoon onion powder
  • Salt and pepper, to taste

Instructions

  • Preheat the oven to 425 degrees F. In a very large bowl (or two large bowls) add the cubed potatoes, onion, garlic, bell peppers, oil, butter, seasoned salt, onion powder, salt and pepper. Toss well to combine ingredients.
  • Divide mixture evenly among two large rimmed baking sheets. Spread potatoes out into one even layer. Bake for 20 to 25 minutes. (Stir halfway through the baking time, so that everything cooks evenly.)
  • Now, raise the heat to 500 Degrees F. Bake potatoes for another 12 to 15 minutes, or until potatoes are golden brown and crispy. *Make sure to keep an eye on them so that they don’t burn! Season again with a little more salt and pepper. Serve warm and enjoy!
