Cheeseburger Gnocchi

Ingredients

  • 1 tablespoon salted butter
  • 1 package (16 ounces) potato gnocchi
  • ½ pound lean ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 medium yellow onion, diced 
  • 3 cloves garlic, minced
  • 1 can (10 ounces) Rotel Diced Tomatoes and Green Chiles undrained
  • 1 cup beef broth
  • 1/4 cup heavy cream
  • 1 cup shredded mild cheddar cheese
  • 3 Tablespoons sliced green onion

Instructions

  • Melt the butter in a large cast iron skillet (or any oven-safe skillet) over medium-high heat. Add gnocchi to the skillet. Cook on one side for 2 minutes or until browned and toasted. Toss the gnocchi and continue cooking for another 2 minutes or until both sides are toasted. Place the cooked gnocchi on a large plate. Cover then set aside.
  • Place the skillet back on the burner and turn the heat to medium-high. Add the ground beef and season with salt, pepper, cumin, and paprika. Add the onion and garlic to the skillet. Cook, stirring occasionally, until beef is all browned. Drain any fat. 
  • Add the Rotel, broth, and gnocchi back into the skillet. Gently stir to combine. Bring to a boil, then reduce heat to low. Cover with a lid and let simmer for a few minutes, or until the gnocchi is tender and most of the liquid is absorbed.
  • Remove skillet from heat. Add the heavy cream and 1/2 cup cheese and stir to combine. Sprinkle the top evenly with the remaining cheese. Place the skillet under the broiler until the cheese is melted and bubbly. *Watch closely so it doesn’t burn!* Top with green onions and serve warm. Enjoy!
