Soft and Chewy M&M Cookies

Ingredients

  • 1 cup salted butter softened
  • 1/2 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 Tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips (I use the Guittard milk chocolate baking chips)
  • 1 ¼ cups classic M&M’s

Instructions

  • Preheat oven to 375 degrees F. Line two large baking sheets with parchment paper or silpat non-stick mats.
  • Using an electric mixer, in a large mixing bowl, cream the butter and sugars until combined. The mixture will look grainy.
  • Add in eggs and vanilla extract. Mix until well combined.
    Gradually, add in flour, baking soda and salt. Mix until just combined on low speed. Cookie dough will start to form. Be careful not to over mix.
  • Fold in the chocolate chips and M&M’s until combined.
  • Using a standard size cookie scoop, scoop dough onto the prepared baking sheets, at least an inch apart. I put 15 cookies on each baking sheet.
    Press additional M&Ms on top and slightly press down with your hand.
  • Bake for 10 to 12 minutes or until a light golden brown. Remove from oven. Let cookies cool on the baking sheets.
    Serve and enjoy!

Notes

*Recipe yields about 38 cookies when using a standard size cookie scoop.
