Scrambled Egg Breakfast Muffins

  • 12 large eggs
  • 1 cup diced cooked ham
  • 1 cup shredded mild cheddar cheese
  • 1 small red bell pepper, diced
  • 1/4 cup sliced green onion
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon black pepper


  • Preheat oven to 350 degrees F. Spray a regular 12-cup muffin pan with non-stick spray. Set aside.
  • In a large bowl, add eggs. Whisk until eggs are well beaten. Add in all remaining ingredients and stir until everything is combined.
    Scoop a little less than a 1/3 cup of mixture into each muffin cup.
  • Bake 20 to 25 minutes or until center of each egg muffin is thoroughly cooked.
    Remove from oven. Let stand 5 minutes to let cool before serving. Enjoy!
