Margherita Flatbread Pizza

Prep Time 10 minutes
Cook Time 12 minutes
Total Time 24 minutes
Servings 4

  • 4 Flatbreads or Pita breads (I like the Papa Pita brand)
  • non-stick cooking spray (I like to use the olive oil spray for these pizzas)
  • 4 teaspoons minced garlic
  • 2 cups shredded Mozzarella cheese
  • 2 Roma tomatoes, sliced thin
  • 8 small basil leaves, chiffonade (cut in small strips)
  • salt and pepper, to taste
  • 4 Tablespoons grated Parmesan cheese

  • Preheat oven to 375 degrees F. Spray two baking sheets with non-stick spray.
Lay two flatbreads onto each baking sheet.
  • Spray the tops of each flatbread with non-stick spray. Then place one teaspoon of minced garlic onto each flatbread. Spread out evenly all over the top.
Sprinkle a half cup of shredded Mozzarella cheese evenly over each flatbread. Then top cheese with four slices of tomato. Top tomato with one to two Tablespoons of basil strips.
  • Season with salt and pepper, then sprinkle one Tablespoon of Parmesan cheese all over the tops of each pizza.
Bake in preheated oven for 12 minutes, or until cheese is melted and bubbly. Remove from oven and let pizzas stand for about 5 minutes. Slice and serve. Enjoy!
