Slow Cooker Chicken Tacos

Ingredients

Chicken Tacos:

  • 2 pounds boneless skinless chicken breasts
  • 1 jar (16 ounces) salsa
  • 1 packet (1 ounce) taco seasoning
  • juice from 1 lime
  • 1 can (15 ounces) black beans, drained then rinsed optional
  • corn or flour tortillas

Taco Toppings:

  • sour cream, shredded cheese, diced tomatoes, cilantro, pico de gallo, guacamole, etc.

Instructions

  • Grease the insert of a large slow cooker with cooking spray. Place chicken breasts inside. Pour salsa over the chicken breasts then sprinkle with taco seasoning. Squeeze the lime juice all over the seasoning.
  • Cover with lid and cook on low heat for 3 to 4 hours or until chicken reaches 165 degrees F. Remove lid and carefully shred the chicken. Stir in drained black beans. Cover with lid and cook for 30 minutes or until everything is heated through.
  • Serve shredded chicken inside warmed flour or corn tortillas, then top with all your favorite taco toppings. Enjoy!
