Heat oil in a large skillet over medium-high heat. Add the diced chicken breast and season with salt and pepper. Cook chicken on all sides until golden brown; about 6 minutes.
In a small bowl, mix the garlic, honey, soy sauce and sweet Thai chili sauce together. Pour this mixture all over the chicken in the pan. Reduce heat to low.
Meanwhile, mix the water and cornstarch together to create a slurry. Whisk the slurry into the sauce with the chicken. Continue to stir and let the sauce simmer with the chicken for a couple of minutes to reduce and to let the flavors blend.
Serve chicken warm and garnish with chopped parsley, if desired. Serve and enjoy!
