Honey Garlic Chicken Bites

Ingredients

  • 2 teaspoons extra virgin olive oil
  • 1 pound chicken breasts cut in 1-inch pieces
  • salt and pepper to taste
  • 3 cloves garlic minced
  • 1/4 cup honey
  • 2 Tablespoons low-sodium soy sauce
  • 2 Tablespoons Thai sweet chili sauce
  • 1/4 cup water
  • 1/2 Tablespoon cornstarch

Instructions

  • Heat oil in a large skillet over medium-high heat. Add the diced chicken breast and season with salt and pepper. Cook chicken on all sides until golden brown; about 6 minutes.
  • In a small bowl, mix the garlic, honey, soy sauce and sweet Thai chili sauce together. Pour this mixture all over the chicken in the pan. Reduce heat to low.
  • Meanwhile, mix the water and cornstarch together to create a slurry. Whisk the slurry into the sauce with the chicken. Continue to stir and let the sauce simmer with the chicken for a couple of minutes to reduce and to let the flavors blend.
  • Serve chicken warm and garnish with chopped parsley, if desired. Serve and enjoy!
