Hot Honey Ground Beef Bowls

Ingredients

Taco Meat

  • 1 ½ pounds lean ground beef
  • 1 small white onion diced
  • ½ Tablespoon minced garlic
  • 1 teaspoon fine sea salt
  • ½ teaspoon black pepper
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried cilantro
  • ¼ teaspoon ground cayenne pepper
  • ¾ cup beef broth

For the Bowls

  • 1 pound roasted sweet potatoes (we like to air fry Roots Farm Fresh Sweet Potato Croutons)
  • 1 pound cooked broccoli florets
  • 1 container (16 ounces) low-fat cottage cheese
  • 1 bottle Mike's Hot Honey

Instructions

For the Taco Meat

  • Cook and crumble the ground beef in a large skillet with the onion until the beef is no longer pink. Drain any grease.
  • Add the minced garlic and cook until fragrant, about 30 seconds.
  • Add the salt, black pepper, chili powder, cumin, dried cilantro, cayenne pepper, and beef broth. Stir everything together. Bring the mixture to a boil, then reduce the heat and allow it to simmer for 10 minutes.

For the Bowls

  • Add 4 ounces of cooked taco meat to each bowl. Add 3 ounces of roasted sweet potatoes next to the beef.
  • Add desired amount of cooked broccoli and ¼ cup low-fat cottage cheese. Drizzle with desired amount of Mike's Hot Honey. Serve warm and enjoy!
