Mongolian Beef and Noodles

Ingredients

  • 1 lb. lean ground beef
  • 1 teaspoon ground ginger
  • 1 Tablespoon minced garlic
  • 3 Tablespoons light brown sugar
  • ½ cup beef broth
  • ½ cup low-sodium soy sauce
  • ¼ cup hoisin sauce
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 8 ounces linguine noodles
  • 2 Tablespoons cornstarch
  • 4 green onions sliced
  • 1 Tablespoon sesame seeds optional

Instructions

  • In a large skillet, cook and crumble the ground beef over medium heat. Once fully cooked, drain off any excess grease.
  • Add the garlic and ginger to the skillet and cook for about 1 minute.
  • Meanwhile, cook the linguine noodles according to the package directions. Rinse them under cold water and set aside.
  • To the skillet with the beef, add the soy sauce, beef broth, brown sugar, hoisin sauce, pepper, and red pepper flakes. Stir everything together until well combined.
  • In a small bowl, mix the cornstarch with a little cold water until smooth, then pour it into the skillet. Bring the mixture to a gentle boil and cook until the sauce thickens. Add the cooked noodles and toss until they are evenly coated with the sauce and beef.
  • Remove from heat and let the noodles sit in the sauce for a few minutes to absorb the flavor. Serve warm, garnished with sliced green onions and sesame seeds, if desired. Enjoy!
