Oatmeal Toffee Chocolate Chip Cookies

These Oatmeal Toffee Chocolate Chip Cookies are loaded with chocolate chips, toffee bits and oatmeal.

Ingredients

  • 1 cup salted butter
  • 1 ½ cups packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 3 cups old fashioned oats
  • 3/4 cup semi sweet chocolate chips
  • 1 ¼ cups milk chocolate chips (Guittard are my favorite)
  • 1 ½ cups toffee bits (Heath or Skor bits)

Instructions

  • Preheat oven to 350 F. Line two large cookie sheets with parchment paper. Set aside. Place the butter and brown sugar in a large bowl. Beat together with an electric hand mixer until light and fluffy; about 2-3 minutes.
  • Add the eggs and vanilla; mix until combined.
  • Add baking soda, salt and flour. Mix until just combined. Add oatmeal and continue mixing until combined. Fold in the chocolate chips and toffee bits.
  • Using a large cookie scoop, drop onto the prepared cookie sheets. Bake for 10 minutes (cookies may still look slightly underbaked). Do not over bake! Remove from oven and let set on cookie sheets for about 3 minutes before transferring to a cooling rack. Enjoy!
