Tuscan Pasta Salad

Ingredients

  • 12 ounces uncooked bowtie pasta
  • 1 jar (7-ounces) sun-dried tomatoes in oil, drained
  • 1 small red bell pepper, diced (seeds and ribs removed)
  • 1 small can (6.5-ounces) sliced black olives
  • 1 ½ cups cups baby spinach leaves
  • 1/2 cup freshly grated Parmesan cheese
  • 3 Tablespoons fresh basil, thinly sliced (chiffonade)

Dressing

  • 1/2 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 2 Tablespoons white vinegar
  • 2 Tablespoons water
  • 2 teaspoons Italian seasoning
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Bring a large pot of water to a boil over medium-high heat. Add the bowtie pasta and cook until al dente, about 12 minutes. Drain and rinse the pasta with cold water.
  • In a large bowl, combine the pasta, drained sun-dried tomatoes, diced red bell pepper, sliced black olives, spinach, Parmesan cheese, and fresh basil. Gently toss until combined.

For the Dressing

  • In a small bowl, whisk together the olive oil, minced garlic, white vinegar, water, Italian seasoning, sugar, salt, and black pepper.
  • Drizzle the dressing over the pasta salad and toss until everything is fully coated. Cover and refrigerate for at least 1 hour before serving.
