This Grilled Apricot chicken is unlike any other. So juicy, tender and full of flavor! You guys- this Grilled Apricot Chicken is one you need to put on your menus stat! Holy moly is it good. It is SO moist ( I hate that word so when I use it you know I mean business. lol), tender and juicy. And the flavor is outstanding. It totally knocked my food-loving socks off!
The sauce you brush on the chicken as it grills is beyond simple and so delicious. It turns a couple chicken thighs (which we’re new to even using) into one magical and mouth-watering meal. I couldn’t believe how different and flavorful chicken thighs were until trying them with this recipe. I’m a new convert for sure! 😀

Grilled Apricot Chicken! Using chicken thighs is something I'll always do now. So juicy and flavorful!

  1. I made this tonight, and before adding the meat to the sauce, I dipped my finger in to give it a taste. Alone, the sauce is just okay. So “okay” that I almost thought about throwing it out and just making plain-ole grilled chicken. I’m so glad I didn’t, though because IT. WAS. AMAZING! I can’t believe this “meh” sauce tasted so much different once combined with the chicken and cooked. It was super super yummy!

I didn’t feel like firing up the grill so I cooked it in my cast iron skillet instead. I served it with white rice and grilled carrots seasoned with honey and cayenne. What an incredible combination of flavors! I’ll definitely be making this again!
