Heat oven to 350°F. Grease a 9x13-inch baking dish with non-stick spray or butter. Set aside.
Peel and core both apples then cut into 16 slices total.
Unroll the crescent dough and separate into 16 triangles. Place 1 apple slice on the larger end of the triangle. Roll to the opposite point, wrapping dough around the apple slice. Place dumpling in pan and repeat process with all remaining apples and crescent dough triangles.
In a medium bowl, stir together melted butter, brown sugar and cinnamon. Pour mixture evenly all over the dumplings.
Pour soda in the center and along edges of the pan. (Don’t pour on top of dumplings.)
Bake for 35 minutes or until dumplings are golden brown. Carefully remove from oven and let stand for 10 minutes before serving. Serve with drizzles of caramel sauce and vanilla ice cream, if desired. Enjoy!
