Mandarin Orange and Spinach Pasta Salad

Mandarin Orange and Spinach Pasta Salad is coated in a teriyaki dressing and tossed with oranges and craisins for an easy summer side dish.

Ingredients

Teriyaki Dressing

  • ½ cup vegetable oil
  • ¾ cup Teriyaki sauce
  • cup white wine vinegar
  • 3 Tablespoons granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon pepper

Pasta Salad

  • 8 ounces dried bow tie pasta
  • 2 cans (11 ounces, each) mandarin oranges drained
  • cup craisins (dried cranberries)
  • 2 green onions thinly sliced
  • 2 Tablespoons toasted sesame seeds optional
  • 1 bag (6 ounces) baby spinach leaves

Instructions

For The Teriyaki Dressing

  • Add all of the teriyaki dressing ingredients to a medium bowl. Whisk until combined and the sugar is dissolved. Set aside.

For The Pasta Salad

  • Cook pasta according to package directions. Drain. Rinse the cooked pasta with cold water then drain again.
  • Place cooked pasta in a large bowl. Pour teriyaki dressing over the pasta. Gently toss to coat pasta in dressing. Cover with lid and place in fridge for at least 2 hours or up to 24 hours.
  • When ready to serve add the mandarin oranges, craisins, green onions, sesame seeds (if using) and baby spinach. Toss gently to combine everything then serve immediately. Enjoy!
