I am super excited about today’s recipe! This is Cheesy Hamburger Skillet and it is lip-smackin’, family-friendly comfort food.

The recipe comes from my good friend Stacey Little’s new cookbook Southern Bite! I was totally honored when I was asked to review his book. Before I even opened it, I knew it would be amazing. Stacey’s food blog SouthernBite.com has been a favorite of mine for years now.

His recipes are all down-home, family-friendly meals and dishes. Not only are his recipes spectacular, but they’re easy to make, too. We all know my love of simple recipes, and he has many!

  1. I think I may only cook comfort food- Ha! Let’s see, probably chili-mac or tomato soup with bacon sandwiches or pancakes!

  2. My absolute favorite, and comforting, meal since a young child is a meal my Dad would make on Sundays. He would put a beef roast with carrots and potatoes in a covered pot and put in the oven to cook while we were at church. Oh, just thinking about it makes me want this childhood favorite!

  3. My grandma’s biscuits and gravy. I wish she was still around to make them, but I am blessed that she taught me the recipe.

  4. Rice, Tomato, Kidney Bean, and Hamburger Goulash…it’s what my great grandma made for my grandma, my grandma made for my dad, my mom made for us, and what I make for my family now 🙂 It’s great comfort food and as my grandma told the story…made lots to feed a family during the great depression 🙂

  5. My favorite go to comfort dish is something I craved constantly when I was pregnant with my son and that is mashed red potatoes with the skins and lots of butter and cream. If I am feeling a little blue and need a pick me up and don’t want to spend the time cutting and boiling potatoes, I throw a washed medium red potato into the microwave and mash it up and it makes me feel instantly happier 🙂
