Chicken
- 3 small boneless, skinless chicken breasts
- 1 Tablespoon light brown sugar
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- ¼ teaspoon garlic powder
- 1/2 tsp each salt and pepper
Pizzas
- 4 Naan Breads OR pita breads (I like the StoneFire brand of Naan bread)
- 1 cup ranch dressing, plus more for drizzling
- 1 clove garlic, minced
- 2 cups freshly grated mozzarella cheese
- 8 slices cooked bacon, chopped
- ¼ cup chopped green onion
Instructions
For Chicken: Preheat oven to 425°F. Pound chicken to an even thickness. Mix the brown sugar, paprika, oregano, garlic powder, salt and pepper together. Set aside.
Line a baking sheet with parchment paper. Place chicken upside down on tray. Drizzle chicken with about 1 tsp oil. Rub over with fingers. Sprinkle evenly with half of the seasoning. Flip chicken. Drizzle with 1 tsp oil, rub, sprinkle with remaining seasoning, covering as much of the surface area as you can.
Bake chicken for 18 minutes, or until internal temperature is 165°F using a meat thermometer. Allow chicken to rest for at least 5 minutes before dicing into 1-inch pieces.
For Pizzas: Place 2 Naan breads on two baking sheets. Mix the ranch dressing and freshly minced garlic clove together. Spread about ¼ cup of ranch dressing evenly over each naan bread. Sprinkle a 1/3 cup of mozzarella cheese evenly over the ranch. Divide the diced chicken and bacon evenly among the 4 pizzas. Top with the remaining mozzarella cheese.
