Today’s Menu Plan Monday Summer Salads is filled with my very best cool and refreshing salad recipes. It’s not officially summer yet, but it sure feels like it here in Southern Utah. We’ve finally reached 100 degrees. Ugh. That means I’ll be sharing a lot of crock-pot recipes, salads and sandwiches in the next month! 🙂

Thank you for all these wonderful recipes. I lived in Texas for 14 years and would love to have the recipe for potato salad that I enjoyed while living there. It is basically mashed potatoes but has pickles in it and was served with BBQ. Can you help me?
