There’s a chance that some of you have set some new year resolutions about eating healthier or more consciously. I have as well, and I must say that being two weeks in, I am proud of myself. What is helping me through it is balance and portion control. I include both healthy meals and not so healthy meals each week, and I am doing the same with this week’s Menu Plan Monday recipes.
It’s still soup season, so that means that your slow cooker should be primed and ready to go. Also, there is something about soup that makes me feel like it’s a healthy meal. If I’m wrong about that, I don’t want to be right!

For something a little richer make sure to try my Shrimp Tortellini Alfredo. It’s creamy, your kids will love it, and shrimp is a healthy alternative when it comes to protein.
Dessert is always a little bit tricky when you’re trying to watch your calorie intake, but I must have something sweet at the end of my week! My Oreo Pudding Poke Cake is light and full of chocolate flavor. I have one slice and slowly savor each bite. It is so delicious!
