Another week has flown right by. My daughter had dance competitions all weekend so that meant we ate out a lot. It’s nice every once in a while, but when it’s three nights in a row it’s just too much. I’m ready to get back in to my kitchen to make some homemade food for my family and I!
This week I have a mix of healthy recipes and some not so healthy. Which is okay, in my book! The Oven-Roasted Chicken and Veggies is a one-pan meal that is ready in no time and really delicious. If you haven’t tried it then you must. The Smothered Chicken Burritos are a personal favorite of mine. If you love some good Mexican food then give them a try. I promise you won’t regret making that recipe!
I had a reader email me last week thanking me for my Menu Plan Mondays. She told me the menu plans have saved her sanity. Her email totally made my day! I was so happy to hear that, and it’s the exact reason I post these menu plans. They make our lives a little bit easier for sure. 🙂

I made the oven roasted chicken and vegetables just last night and it was a hit with my husband and I! Will definitely be making it again. 🙂
Thank you for posting the nutrition for your recipes. I follow a low sodium diet and this makes it so easy. The Oven Roasted Chicken and Veggies will be on my menu this week!!
