The addition of ham and corn take ordinary scalloped potatoes to the next level! This delicious bake is so amazing and definitely a new family favorite at our house. 🙂 

I love to make meals like this during the winter. Warm, cozy and totally comforting. When I served this amazing meal all I added was a green salad as a side dish. It was the perfect cozy Sunday dinner. Yum! 🙂

Scalloped Potatoes, Ham & Corn Bake

Ham and Corn take these Cheesy Scalloped Potatoes to the next level. A meal all in itself!

Ingredients

  • 2 1/2 pounds Russet potatoes peeled
  • 1/4 cup butter 1/2 stick
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups milk
  • 2 cups grated Colby and Monterey Jack cheese divided
  • 1 10 ounce bag frozen corn, thawed
  • 1 pound precooked ham steak cut into small cubes
  • chopped fresh parsley for topping

Instructions

  • Preheat oven to 350 degrees F. Grease a 9×13 inch baking dish with non-stick spray.
  • Slice potatoes into 1/8 inch slices (very thin). Lay 1/2 of the sliced potatoes into the bottom of the baking dish. Sprinkle 1/2 of the corn and 1/2 of the ham pieces over the potatoes.
  • In a medium saucepan, over medium heat, melt the butter. Stir in the flour and whisk to combine. Pour in the milk, salt and pepper. Continue to stir constantly until the mixture thickens and bubbles. Remove from heat. Stir in 1 cup of the cheese.
  • Pour half of the cheese sauce over the potatoes, corn and ham. Repeat another layer of potatoes, ham and corn. Pour remaining cheese sauce over the top.
  • Cover pan with aluminum foil and bake for 40 minutes. Remove foil and sprinkle remaining cheese over the top. Bake another 20 minutes or until bubbly and hot.
  • Let stand 10 minutes before serving. Sprinkle each serving with fresh chopped parsley, if desired.

  2. Very good. I used Pepper Jack Cheese instead of the cheese listed to give it a little spice. Cooking time needs to be longer as some of the potatoes still a little crunch to them. Over all very good and will make it again.

  3. Do you think that you could make this ahead of time and freeze it?? We are expecting our first child in January, and I am planning on spending a weekend in December making meals that can be frozen! Any feedback would be wonderful! Thank you!

    I made this with some leftover ham from Christmas . I followed your recipe exactly and it turned out great, like you I had a green salad to go with it and it was a perfect meal. The leftovers was great for the next day also. I make many of your recipes and all turn out great. Just wondering do you ever make anything that does not turn out good? Thanks for sharing all your great recipes.
