I love my crock pot. I use it ALL the time and definitely year round. Slow cookers are little life savers, especially on busy days! It’s such a good feeling to get dinner prepped and out of the way first thing in the morning. The extra bonus is smelling it cook all day!

Not only is this recipe super convenient it is delicious. The ranch flavor is just perfect. Not too overpowering at all. My kids devour this and so does my hubby. It’s on the dinner rotation often at my house. 🙂

Crock Pot Creamy Ranch Chicken

Delicious creamy ranch chicken, potatoes and carrots slow cooked in the crock pot.

Ingredients

  • 6 medium Russet potatoes cut into 2-inch pieces
  • 2 cups baby carrots
  • 4 boneless skinless chicken breasts
  • salt and pepper to taste
  • 1 large can (23 ounces) condensed cream of chicken soup
  • 1 packet (1 ounce) dry ranch dressing mix
  • 1/2 cup milk
  • fresh chopped parsley optional

Instructions

  • Spray a large crock pot (I use a 7 quart) with non-stick spray. Place cut potatoes and baby carrots in the bottom of crock pot. Lay chicken breasts over the top. Season with salt and pepper.
  • In a medium bowl, whisk together cream of chicken soup, dry ranch dressing mix and milk. Pour this mixture evenly over the chicken.
  • Cover with lid and cook on high heat 5 to 6 hours OR on low heat 8 to 9 hours. (*It is important to not remove the lid during the entire cook time.) Top each serving with fresh chopped parsley, if desired. Enjoy!

        1. Are you talking about your dry ranch mix or the ranch dressing in liquid form? I don’t have any dry mix but I have liquid ranch dressing.

I have a big family so I usually try to cook things where I have to shred chicken or something instead of having whole pieces of chicken and I use chicken thighs only due to texture reasons for my kids. if I use about 6-8 chicken thighs, which are usually smaller in size, would I need to double the other ingredients to make enough for 5 people, which include 3 adults 2 TEENS? Sometimes I also like leftovers for them for lunch if possible lol.

  2. Made this for dinner today, but did it using the homemade cream of chicken. It definitely didn’t turn out, extremely watery. So bummed but I’m sure it will taste good anyway 🙂 just wanted to give the heads up that I would stick with the canned soup to get the right consistency.

    1. Stefanie, I’m sorry it ended up watery when you used the homemade condensed soup. I ended up deleting that idea because others had the same problem. I would suggest everyone sticking with the canned version of condensed soup in this recipe. Thanks 🙂

      2. I found an idea for crock pot cooking. Fold several paper towels and put over crock pot before putting the lid on. Cooks great and the paper towel catches the condensation.

        1. You only need to do that if you are baking in it. Otherwise the condensation adds to the liquids you’re cooking with.

      3. I put this on this morning with 2 chicken breasts, Carlotta and sweet potatoes. I only had one can of cream of chicken so I used a little extra milk and a little chicken broth. Will this still be ok or should I add something more?

      1. I was thinking the same thing. To avoid extra water the chicken needs to be fully thawed and then I pat them dry as much as I can before cooking. I think water is injected into most chicken breast bought at the store, especially frozen ones.

    2. Mine came Out extra watery too. Chicken breast was fully thawed and followed instructions for home made cream of chicken. I think it’s just the chicken breast that made it so funny. Sad face!

  3. Made this for Sunday dinner since it was cold and rainy here. For some color, I added a small bag of frozen peas in about 30 minutes before serving. It turned out delish! Definitely adding this to my go to meal collection.

      1. Question, I’d like to add broccoli and cauliflower but not sure how long it’d need at the end, 30 min, 1 hour? What do you think?

    1. When cooking in a traditional slow cooker (not an Instant Pot or other multi cooker) you should never use frozen meat as bacteria can start to grow on it before the slow cooker comes to temperature.

    1. I doubled the recipe and used a lg roaster covered with tin foil. It takes about 2 hrs. It seemed the carrots take the longest to cook. This definetly was a great dish. My oven temp was set at 400.

  11. This probably sounds dumb, but do you need to stir it around so the potatoes don’t burn? I don’t use the crock pot often, I’m new to it.

  12. This can be made with frozen chicken, also adding half a block of cream cheese at the end and letting it melt , then stirring ( about last 30 min ) takes it to the next level

    1. Mine turned out mediocre. I didn’t have a big can of cream of chicken so I used one small and one cream of onion. It wasn’t the greatest but wasn’t horrible either. i wondered if this could frozen and reheated at a later time? It’s too much for one person.
