Oh friends, have I got an amazing treat for you. This is Gooey Chex Mix and it is a life-changer! 🙂 This is the ultimate sweet and salty snack that would be perfect for game day or any party.

Rice Chex and Golden Grahams cereals give it that crunch we all love, and it’s covered in a sweet coating with shredded coconut and almonds. It is so yum!

Sweet Chex Mix

I remember when I first had this deliciousness at a friends party a few years back. After I had my first bite I knew there was no turning back. haha. I could not stop eating it, and no one else could either. It was gone in no time at all!

This recipe makes a lot so it’s the perfect thing to make when expecting a crowd. You can also whip it up pretty quickly. It takes about 20 minutes to make so it’s another great recipe to have on hand for a last minute treat!

Ingredients
  • 1 box (12 ounces) Rice Chex cereal
  • 1 box (11.7 ounces) Golden Grahams cereal
  • 1 bag (7 ounces) sweetened shredded coconut
  • 2 bags (2 ounces, each) sliced almonds
  • 1½ cups (3 sticks) salted butter
  • 1½ cups granulated sugar
  • 1⅔ cups light corn syrup
  • 1 teaspoon vanilla extract
Instructions
  1. Line two large rimmed baking sheets with parchment paper. Set aside.
  2. In a very large bowl, combine Rice Chex cereal, Golden Grahams cereal, coconut and almonds. Gently stir to combine. Then divide cereal mixture evenly into two large bowls. Set aside.
  3. In a medium saucepan, melt butter over medium-high heat. Once butter is melted add the granulated sugar and corn syrup. Stir continuously until mixture comes to a soft boil.
  4. Once boiling, set a timer for two minutes. Remove from heat after two minutes.
  5. Quickly stir in vanilla extract.
  6. Carefully, (it will be very hot) pour half of the syrup mixture over each bowl of the cereal mixtures. Gently stir to coat cereal. Pour each bowl out over prepared baking sheets. Let stand a few minutes to cool then dig in and enjoy!
Notes
*This recipe makes a very large batch. You can easily cut this recipe in half if you don't need to make this much.
*Store any leftovers in an airtight container at room temperature for up to a week.
