Hi, friends! Happy New Year to you all!! Cheers to an amazing fresh start at a new year. Of course, we all have goals to achieve this year and losing weight is usually one of them. Am I right? Ha! 😉 I always gain a few pounds in December with all the yummy holiday food, so I’m eating a lot lighter now and start working out tomorrow morning. I’m actually looking forward to it.
To kick off our light and healthy-er eating goals the next few menu plans will have lower calorie fare that are still delish. The Szechuan Chicken is one of our absolute favorites. You can replace the whole wheat pasta with zucchini noodles! It is SO good that way and cuts the calories way down. Also, I LOVE the Oven-Baked Chicken Fajitas. I get my Mexican food cravings satisfied while still eating healthy. 🙂
