Hello, hello! Sorry I was MIA on Friday and didn’t post anything. My kids were home all last week for Spring Break, so I was the event coordinator trying to entertain them. Ha! We had lots of fun though and kept busy. It makes me excited for Summer when I’ll get to spend more time with them.
Speaking of Summer, I am so excited we are finally getting our block walls around our house and landscaping in the backyard. It’ll be so nice to have it all done when the kids are out of school during the Summer break. We’re putting in an underground trampoline and a fire pit! I can’t wait for all the backyard barbecues and sitting around the fire roasting marshmallows. 🙂
Okay, lets get on with Menu Plan Monday #133. Since St. Patrick’s Day is this week I am making all kinds of green food. The Shepherd’s Pie is one of our faves. I know, I know, it’s only called Shepherd’s Pie if you use lamb, and Cottage Pie when you use beef. I am not stupid! You would not believe how many people take time out of their day to comment and chew me out about that. LOL It’s crazy. I grew up calling it Shepherd’s Pie so that’s what I call it now. Anyways- as long as it’s delicious (which it is!) who cares what you call it! Okay. stepping off my soap box now.. 😀
