Menu Plan Monday is a collection of family favorite recipes from dinner to dessert.

Not only is it the most wonderful time of the year, but it is also the coziest time of the year. Here in Southern Utah, we don’t get a lot of snow. Every now and again, we do get a little powder on our beautiful red rocks, but it mostly lives in our hearts and imagination. This week for Menu Plan Monday, I am going to make sure you and your family can enjoy cozy meals perfect for the winter. Whether the snow is falling or not!

It is 100% soup season, and I have made quite a few already, and there is plenty more to make. This week give my Chicken Gnocchi Soup a try. Not only is it creamy, rich, and delicious, but it will stick to your ribs!

Another favorite on this week’s menu is my Cream Cheese Beef Enchiladas. They take a traditional enchilada to an indulgent level with the addition of cream cheese. Each bite is sensational!

You know we must enjoy a sweet treat at the end of the week. One of my favorite things to make this time of year are my Oatmeal Cream Pies. These two chewy cookies are irresistible with that sweet cream filling. They are truly delicious bliss!
