LIGHTEN THINGS UP

Swap out the regular cream cheese for the ⅓ less fat cream cheese, and you can also use lite cool whip for a just as tasty, but lighter version.

FRUIT OPTIONS

You can add in whatever fruits you’d like, but here are a few options I think would work best in this salad:

  • Cherries
  • Boysenberries
  • Grapes

CAN I USE FROZEN FRUIT?

I would advise against it. The frozen fruit will add excess moisture to the salad creating a soggy, mushy mess.

YUMMY ADVICE

This salad is best when served fresh, and eaten fresh. The earliest I’d recommend making it is the morning of whatever event you plan on serving it for.

Berry Cheesecake Salad

Prep Time 20 minutes
Servings 8

Ingredients

  • 1 block (8 ounces) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 container (8 ounces) cool whip, thawed
  • 2 ½ cups sliced strawberries
  • 1 ½ cups blueberries
  • 1 ½ cups raspberries
  • 1/2 cup blackberries

Instructions

  • In a large bowl, using an electric hand-mixer, beat the cream cheese and granulated sugar together until combined.
    Fold in cool whip.
  • Pour the sliced strawberries, blueberries, raspberries and blackberries into the cream cheese mixture. Gently fold in fruit to combine everything. Serve immediately. Enjoy!
